Hearty Minestrone Soup
This is my Dad's recipe. I think he got it out of a magazine years ago. It is a family favorite at my house. The trick is to get a very good quality Italian sausage. I sometimes use half hot and half sweet Italian sausage, as our local butcher, Marcianti, makes a very hot sausage. That absolutely makes this dish.
Heat olive oil in heavy pan, add onion and carrot. When onion is almost clear, add garlic. Slice Italian sausage, or free it from casing and break into pieces. Cook sausage until no longer pink. Add all other ingredients except pasta. Cook for at least 30 minutes. I like to put this soup on early and let it cook for a couple of hours. Really deepens the flavor.
Cook macaroni according to package directions and add macaroni to soup in bowls. Serve with parmesan or romano cheese.
