Pepper Rice

Side dish or main meal - you decide.  Chock full of antioxidants.

Dump chicken (including liquid) in a saucepan.  Add vegetables and cook until tender crisp.  Add Broth, and cook according to rice package directions.  If using fresh, rotisserie or frozen chicken, you may need to add more liquid.
