Chicken Broccoli Quesadilla
There are lots of semi-prepared foods that you can keep in your freezer to throw a meal together in minutes. Frozen broccoli can be used as well as fresh, and canned or rotisserie chicken can also be substituted.
Cook broccoli to desired tenderness. Heat chicken and mix broccoli, chicken and salsa together. Put tortilla in saute pan.
Put chicken mixture on tortilla, top with cheese. Place second tortilla on top. Cook until tortilla on bottom starts to brown, around 3 minutes. I use a plate to dump out the quesadilla at this point, and then another plate, so that I can put the uncooked side down without trying to turn the whole thing with a spatula. Cook for another three minutes, cut in quarters and serve. You can add sour cream or guacamole, but remember they add calories and fat too.
