Spinach Chicken
I love spinach. It is so good for you, and so tasty if done right. This recipe uses canned chicken. I always have that on hand, and when used in recipes is a cheap and tasty option.
Heat olive oil in a large saute pan. Add onion and mushrooms and cook until onions are clear. Add garlic and chicken, and cook until chicken is warmed through. Add spinach and cook until wilted. Salt and pepper to taste. I often use nutmeg with spinach. It just adds an interesting flavor. Serve as a main or side dish. Can be served on couscous, rice, quinoa, or pasta.
