Pepper Eggs

Amp up the flavor and vitamins in your eggs.  Makes a great lunch or supper dish.  Eggs aren't just for breakfast anymore.

Heat olive oil and margirine in a saute pan.  Cook peppers until tender crisp.  Beat eggs, egg whites and cheese together.  Add to cooked peppers and cook until eggs are set.

Serve as a sandwich filling, wrap filling or as a main dish.
