Hatch chile chicken stew
Another more complicated recipe. Hatch chiles are very spicy, so make sure to wear gloves while handling them.
Roast chicken pieces in stock pot for 30 minutes, remove from oven and allow to cool. Saute seasoning mix in same pot, add garlic when seasoning is almost clear.
Shred or diced cooked chicken and add to pot. Add vegetables, diced chile and chicken broth. Cook for at least 30 minutes, or until carrots are tender. More hatch chile can be used for a spicier stew.
