Ground Turkey and Vegetables

An easy main dish for a low calorie diet.  Lots of volume and flavor for minimal calories.

Brown turkey with onions, peppers and mushrooms.  Poor off fat.  Add eggplant, cauliflower and tomatoes.  Cook until eggplant and cauliflower are tender.
