Fake Cauliflower Macaroni and Cheese
This easy fake macaroni and cheese will make a meal with a salad, or a great side with a lean protein. Blanch cauliflower in microwave or in boiling water for 5 minutes. Break into florets. Combine egg white and Parmesan and Romano cheese, toss with cauliflower to coat. Put half in baking dish, sprinkle with one cup of the cheese crumbles. Fill dish with remaining cauliflower mixture and remaining cheese crumbles. Bake at 350 for 35 to 45 minutes or until top cheese is lightly browned and bubbly.
