Eggplant Beef

Another variation on stewed eggplant, with fewer ingredients.

Brown beef and mushrooms and drain fat.  Add eggplant and cook until it starts to release water.  Add tomato paste and cook until eggplant is tender.  Salt and pepper to taste.
