Cucumber and Tomato Salad
This is by far my favorite summer salad. I could eat it every day (and usually do). When I can't get creole tomatoes, I use other varieties, but it is never as good.
Mix tomatoes, cucumbers and onion in a bowl. Sprinkle with truvia (or sugar or other artificial sweetener. For this recipe, you want the equivalent of one teaspoon of sugar) and salt. Toss to coat. Add olive oil and toss. Finish with balsamic vinegar. Chill at least 30 mintues.
