Chicken Cacciatore
This recipe is a little more complicated than some of the others. It is a lighter take on classic chicken cacciatore, as the chicken is not dredged in flour before browning.
Place olive oil in heavy pan. Brown chicken on each side, but don't worry about cooking through, about 5 minutes on each side. Remove chicken from pan. You may have to do the chicken in batches, depending on the size of your pan. Add onion and carrot to pan, and cook until onion is almost clear, then add garlic. Return chicken to pan and add tomatoes and herbs. Bring to boil, turn down to simmer and add wine. Cook for one hour stirring occasionally.
