Cabbage Beef
Another variation on ground beef and tomatoes. Cabbage is a great vegetable for weight loss. I would eat this for lunch or dinner with a side salad. This is a somewhat bland recipe. Feel free to add herbs and spices that suit your taste.
Cole slaw mix in a bag can be substituted for a partial head of cabbage. The cabbage will cook down considerably, so extra cabbage won't hurt.
Saute beef, drain fat. Add cabbage until wilted. Stir in tomato paste until well mixed, stir in cottage cheese, heat through and serve. Salt and pepper to taste.
