Hearty Minestrone Soup

This is my Dad's recipe.  I think he got it out of a magazine years ago.  It is a family favorite at my house.  The trick is to get a very good quality Italian sausage.  I sometimes use half hot and half sweet Italian sausage, as our local butcher, Marcianti, makes a very hot sausage. That absolutely makes this dish. Heat olive oil in heavy pan, add onion and carrot.  When onion is almost clear, add garlic.  Slice Italian sausage, or free it from casing and break into pieces.  Cook sausage until no longer pink.  Add all other ingredients except pasta.  Cook for at least 30 minutes.  I like to put this soup on early and let it cook for a couple of hours.   Really deepens the flavor. Cook macaroni according to package directions and add macaroni to soup in bowls.  Serve with parmesan or romano cheese. Stromboli

This recipe can be adapted many ways.  The meats I list are the ones my Dad liked to use, but you can use whatever you like.  For Christmas in 2016, I used turkey and gouda cheese in one, and it was delicious.  Use your imagination with the meat and cheese combinations. Unroll the french loaf carefully.  ( you can see where it was rolled up to make a loaf in the first place if you look on the side)  Spread out on a cutting board.  Layer Ham, cheese, salami and pepperoni on the bread covering the entire surface leaving about an inch or so at the top and bottom and a half inch on the sides.  Roll up and seal seam.  Brush with egg wash and bake per directions on french loaf.  Allow to cool slightly before slicing. Mom's Hot Dog Chili

This recipe came from my mother-in-law, who got it from a church lady.  This is a great hot dog chili.  Mom always froze this in small containers so there would be just enough for one meal in each container.  It freezes great.
